Ingredients

blackberries

sugar

lime, juice and zest

glucose syrup

Preparation method

  • Freeze the blackberries (you can also use frozen blackberries).
  • Allow the blackberries to defrost slowly and catch the juice to use.
  • Use 200g of the blackberry juice and bring to the boil together with the other ingredients to 104°C.
  • Allow to cool.

Serving suggestions

  • As a marinade, as a sauce with a dessert, or as a basis for a sweet and tangy lemonade.
