Bloody Mary shave ice

An icy variation on a classic cocktail, the Bloody Mary. The addition of tabasco and vodka makes it a savoury ice, so it is extremely useful for serving with amuses or as an element of a cold starter. In this recipe, we use canned tomato purée, because tomatoes are always canned when fully ripe.

Ingredients

canned puréed tomatoes

vodka

tabasco

Worcestershire sauce

lemon juice

horseradish, freshly grated

leaves

gelatine (3.5g), soaked in cold water

 

 

salt

Preparation method

  • Measure the puréed tomatoes, and heat one quarter in a pan.
  • Dissolve the pre-soaked gelatine in it and mix with the rest of their juice.
  • Season with vodka, tabasco, Worcestershire sauce, lemon juice, horseradish, and salt, and place in the freezer.
  • Stir with a fork every half hour to ensure that a good structure forms.

Serving suggestions

  • As an element in an amuse-bouches assortment, with an espuma of celery, for example.
  • As part of a cold starter with such ingredients as scallop and fennel.
