Ingredients

blueberries

sushi vinegar

 

 

glucose syrup

twists of

black pepper

½

 

lime, juice and zest

neutral olive oil

Preparation method

  • Crush the blueberries, add the sushi vinegar, and pull vacuum twice in an open tray.
  • Strain the juice and add half its weight in glucose syrup.
  • Boil the juice together with the black pepper and lime juice and zest.
  • Leave to cool before adding the olive oil.

Serving suggestions

  • As a garnish with a game starter or main course.
  • As a dressing in a salad with duck confit.
