Blueberry 'Haagse bluf'

This dessert made from whipped egg whites with sugar and berry juice is very simple but extremely delicious. Use wild blueberries for a more intense flavour.

Preparation method

  • Mix the juice with the egg white and sugar and beat together in a planet mixer.
  • Serve immediately. 

Serving suggestions

  • As part of a composition with components of red fruits, green herbs, or citrus fruits.
  • Serve, for example, with wood sorrel and other wild red fruits such as blackberries, redcurrants, or raspberries.
