Braised rocket

Although many lettuce varieties are often only used in cold preparations, certain varieties can also be used for warm preparations. In this preparation, rocket certainly doesn't take a back seat to other leafy vegetables.

shallot, finely diced

rocket

As needed:

 

salt and pepper

Preparation method

  • Gently fry the shallot in the butter.
  • Add the rocket and braise until the leaves have wilted.
  • Season to taste with salt and pepper. 

Serving suggestions

  • Serve instead of spinach or kale.
  • As a component in a composition with fish.
  • In a composition with components of pork, tomato, and aubergine.
