Preparation method

  • Blanch the broccoli with lemon, salt and pepper and pour beurre noisette over it before serving.

Serving suggestions

  • As a vegetable garnish, e.g. with cod, fennel, cauliflower or leek.
  • This classic recipe can also be used to create the basis for a crèmeux or warm foam.
