Preparation method

  • Mix the flour, sugar, baking powder and baking soda.
  • Stir in the eggs using a planet mixer.
  • Add the melted butter, broccoli purée and mature cheese.
  • Mix until you have a smooth consistency and season with salt.
  • Finish cooking in a madeleine mould at 180°C for 8 minutes.

Serving suggestions

  • As part of an amuse-bouche.
  • As an aperitif snack.
