dry potato purée

kale, endive, oxheart cabbage, etc.

butter

Preparation method

  • Mix the potato purée with the vegetables of your choice.
  • Melt a little butter in a frying pan.
  • Put the potato purée in the pan and press down gently into a round cake of about 2 to 2.5cm high.
  • Fry on low heat until golden brown, turn over and fry the other side.

Serving suggestions

  • As a vegetable side dish in a composition with meat or fish.
  • As part of a traditional English breakfast served with bacon, black pudding, and eggs.
  • As a basis for a snack with duck leg confit and pickled onions.
