Ingredients
- 300 ml buttermilk
- 50 ml heavy cream
- 1 lime, zest
- 10 g sugar
- 1 g salt
Preparation method
- Mix together the buttermilk and whole milk.
- Season to taste with the lime zest, sugar, and salt.
- Pour into a Pacojet beaker and freeze.
- Process with the Pacojet before serving.
Serving suggestions
- As part of a composition with e.g. cucumber, avocado, dill and sour cream components.
