Buttermilk snow

Ingredients

  • 300 ml buttermilk
  • 50 ml heavy cream
  • lime, zest
  • 10 sugar
  • salt

Preparation method

  • Mix together the buttermilk and whole milk.
  • Season to taste with the lime zest, sugar, and salt.
  • Pour into a Pacojet beaker and freeze.
  • Process with the Pacojet before serving.

Serving suggestions

  • As part of a composition with e.g. cucumber, avocado, dill and sour cream components.
