Cabernet Sauvignon (wine)

Cabernet Sauvignon vinegar

sushi vinegar

grapeseed oil

coriander seeds, crushed

Preparation method

  • Bring the wine, honey and coriander seeds to the boil and reduce to 50g.
  • Add the remaining ingredients and stir thoroughly a few times to cause the dressing to curdle.

Serving suggestions

  • This dressing, with sweet and sour notes, goes well with game dishes and liver.
