Classical salad, named after the Italian restaurateur Caesar Cardini. The salad contains eight fixed ingredients with additions from several other chefs.

Preparation method

  • Pick the romaine lettuce leaves and rinse in plenty of cold water. Dry in your salad spinner.
  • Cut the lettuce into long strips, 1.5 centimetres thick. Leave to cool in the refrigerator.
  • In your food processor, mix the garlic, egg yolk, Worcestershire sauce, and lemon juice. Add the olive oil drop by drop, until a pale sauce results. Season to taste with salt and pepper.
  • Mix the romaine lettuce with the dressing. Grate the Parmesan cheese and add the boiled and diced egg.
  • You could add a garnish, such as grilled chicken breast, anchovies, mustard, or red onion.
  • Season to taste with salt and pepper.
  • Serve immediately.

Serving suggestions

  • As part of a cold starter or combined salad.
