Ingredients

fennel seeds

black pepper, sea salt

Preparation method

  • Wash the fennel bulbs and cut them into vertical slices approx. 1cm thick.
  • Heat the butter and olive oil and fry the fennel until golden brown on both sides.
  • Sprinkle with the cane sugar and fennel seeds and caramelise.
  • Season to taste with lemon zest, black pepper, and sea salt.

Serving suggestions

  • As a basic ingredient in a lukewarm salad with various types of lettuce, rocket, and goat's cheese on the warm fennel.
  • As a vegetable garnish with fish dishes, e.g. with salmon gratineed with green herbs served with caramelised fennel and lemon risotto.
