Ingredients

clarified butter

maple syrup

Preparation method

  • Peel the pineapple and cut into quarters. Remove the core and cut the pineapple into at least 10 neat rectangles. The pineapple leftovers can be used for other components.
  • Skewer the pineapple rectangles with a satay skewer or larding needle.
  • Insert a sprig of rosemary through it.
  • Fry in clarified butter until golden brown.
  • Add the maple syrup and allow to caramelise.
  • Add the butter and emulsify with the caramel.

Serving suggestions

  • As part of a dessert, e.g. with vanilla ice cream and caramelised walnuts.
  • As part of a dessert, e.g. with banana and coconut components.
