Preparation method

  • Cut the plums in half and remove the stones.
  • Portion the plum as desired by cutting it into segments, for example.
  • Cover with a thin layer of cane sugar.
  • Lay the plums on a stainless-steel sheet and scorch with a gas blowtorch.

Serving suggestions

  • As a component in a dessert with Crema Catalana.
  • As a component in a dessert with almond ice cream and oranges.
  • Delicious with yuzu, basil and lemongrass.
