Preparation method

  • Brown the cardamom seeds in a dry pan,
  • and then lightly crush in a mortar.
  • Heat the cream with the cardamom to approx. 50°C and leave to infuse for an hour.
  • Sieve the cardamom out of the cream and then mix the cream with all the other ingredients except the gelatin.
  • Heat the composition in a pan or Thermomixer to 85°C stirring/mixing continually.
  • Leave to mature for 24 hours.
  • Churn to form ice cream using an ice cream machine.
  • Store in a freezer at -14°C.

Serving suggestions

  • In a composition with white chocolate, carrot, and almonds, for example.
  • In a composition with pear, caramel, and hazelnut, for example.
  • In a composition with banana, peanuts, and dark chocolate, for example.
