Carrot preserve

A lovely accompaniment to game and poultry, as well as in combination with goose or duck liver. Very easy to make, and packed with flavour. The addition of brandewijn gives it a uniquely Dutch kick.

gelling sugar

lemon brandewijn

Preparation method

  • Peel and grate the carrot on a mandoline.
  • Wash the oranges and zest with a fine grater.
  • Combine all ingredients except the brandewijn in a pan and cook until the carrot is done.
  • Remove from the heat and add the lemon brandewijn; then immediately transfer to a suitable container.

Serving suggestions

  • As an accompaniment to game and poultry.
  • Lovely in combination with wild duck and pumpkin components.
  • Also combines well with red beet.
