Ingredients

carrots

cloves

garlic

red chilli pepper

vegetable stock

olive oil

Preparation method

  • Peel the carrots and cut into equal-sized pieces.
  • Clean the garlic, ginger, and chilli pepper and cut them into very small pieces.
  • Put all the ingredients on the heat together with the vegetable stock.
  • Simmer until the carrots are completely cooked.
  • Drain and collect the liquid.
  • Finely purée the mixture in a blender.
  • Add just enough of the cooking liquid to ensure that the sauce is smooth.
  • Assemble the sauce with a dash of olive oil and season to taste with salt and pepper.

Serving suggestions

  • Use as a sauce to accompany a main dish with quail, guinea fowl, or cod. 
  • Combine with, for example, blue cheese ravioli.
