Ingredients

cauliflower florets

egg

1

 

egg yolk

1

tbsp

Dijon mustard

lemon juice

350

ml

sunflower oil

As needed:

 

salt and pepper

Preparation method

  • Mix the egg, egg yolk, mustard, cauliflower florets, lemon juice and sunflower oil with salt and pepper in a measuring jug until you have a fine mayonnaise.
  • Leave for a couple of hours to allow the flavour of the cauliflower to fully develop.

Serving suggestions

  • Various uses, such as classic mayonnaise.
  • As a sauce with deep-fried cauliflower with garam masala.
  • As a component in a composition with sea bass, fennel, onion or legumes.
