Preparation method

  • Cut the celeriac into neat batonettes.
  • Place in a vacuum sealer bag together with the walnut oil and pull vacuum.
  • Marinate for at least 12 hours.

Serving suggestions

  • As part of a starter or further preparation, such as for a new variation on Waldorf salad.
  • As part of an amuse-bouche, such as with a celeriac panna cotta.
