Ingredients

celeriac

garlic, chopped

orange zest

sea salt and black pepper

Preparation method

  • Clean the celeriac and cut into equal pieces.
  • Place the various flavour enhancers in an oven dish and place the celeriac on top.
  • Generously drizzle with olive oil and place more flavour enhancers on top of the celeriac.
  • Place in an oven at 175°C for approximately 25 minutes, checking regularly to make sure the flavour enhancers are not burning and to see whether the celeriac is done.
  • Drizzle with more olive oil and lemon juice if necessary.

Serving suggestions

  • As a vegetable garnish, such as with onions, mushrooms or sprouts.
  • As a basis for a vegetarian dish with various celeriac components.
  • As a basis for further preparation, such as to make a mousseline.
