Ceviche marinade with passion fruit

Ceviche is a way of curing fish using high-acidity juices such as lemon or lime juice. In this recipe this is replaced with sushi vinegar and passion fruit juice. The effect on the structure of the fish remains the same but adds a unique flavour.
