floury potatoes, peeled

milk

As needed:

Preparation method

  • Finely chop the chard.
  • Boil the potatoes until they are completely cooked.
  • Bring the milk to the boil and add the chard leaves.
  • Purée the leaves with a hand-held blender and add the butter.
  • Purée the potatoes and use the liquid to create a smooth consistency.
  • Season to taste with salt.

Serving suggestions

  • In a dish with a poached egg and pancetta.
  • Perfect in a composition with lamb, tomato, and courgette.
  • As a component in a composition with halibut, potato, and fennel.
