Preparation method

  • Heat a (cast-iron) pan on a medium heat.
  • Halve the apricots and remove the stone.
  • Distribute half of the sugar evenly in the pan.
  • As soon as the sugar starts to dissolve, place the apricots cut-side up in the sugar.
  • When the apricots are lightly charred, drizzle them with amaretto.
  • Halve the passion fruits.
  • Scoop the apricots onto a plate, scoop the flesh from the passion fruits, and mix with the apricots.
  • Garnish with some orange, lemon zest, and fresh mint.

Serving suggestions

  • As a component in a dessert with dark chocolate and an almond sorbet.
  • In a dessert with cardamom ice cream.
