This component really brings out the rich flavour of courgette and it also looks very exciting. Ideal for use in an amuse-bouche or a garnish for a hot dish.

Preparation method

  • Char the outside of the courgette black by holding it above an open fire or by using a kitchen blow torch.
  • Continue cooking the courgette in an oven set to 180°C for approx. 30 minutes depending on its size.
  • Cut into slices, sprinkle with coarse sea salt, and serve warm.

Serving suggestions

  • As part of a hot starter or main dish, e.g. with wild pigeon or a smoked product.
