Preparation method

  • Char the thyme until its starts to smoke.
  • Deglaze with the grape seed oil and sprinkle over the salt.
  • Pull vacuum in a large vacuum sealer bag and place in a warm water bath at 60 to 70°C for one hour.
  • Cool immediately in ice water.

Serving suggestions

  • As part of a starter with duck, chicken, or veal, or as part of a vegetarian starter.
  • As part of a main course served with pickled vegetables.
  • Use to season grilled components and boost their flavour.
