Chicory with anchovy
This simple snack showcases all five of the fundamental flavours: sweet, salty, sour, bitter and umami. Easy to prepare, but quite complex in flavour. A very surprising result prepared with the humblest of ingredients.

Preparation method
- Chop the chicory into fine dice (brunoise) and dress with mayonnaise, ginger syrup, and lemon juice, and season with pepper and salt.
- Fill the chicory leaves with the chicory salad and top each with an anchovy fillet.
Serving suggestions
- Serve on its own as a snack or amuse-bouche.
- As a side dish to main dishes, e.g. with mackerel, cod and a potato component.
- Delicious in a composition with components of sardine, pinenut, and raisins.
