Chocolate and raspberry coral

This is a chocolate garnish that looks spectacular, and it also has a unique taste and structure. Instead of using ornamental discs made from chocolate for decoration, it is also easy to make natural shapes such as this coral. We used freeze-dried raspberries for this recipe, but you can experiment with other types of powders as well.

Makes 300g.

Preparation method

  • Cover the bottom of a flat container with freeze-dried raspberry powder.
  • Bring dark chocolate to temperature (e.g. sous vide).
  • Spoon the chocolate into a piping bag and pipe irregular shapes into the powder.
  • Leave the chocolate to harden in the powder.

Serving suggestions

  • As a friandise.
  • As a garnish for a dessert.
  • Vary by using different kinds of freeze-dried fruits, coconut or finely chopped nuts.
