Ingredients

Preparation method

  • Mix the sugar and two teaspoons of cinnamon.
  • Sieve together the flour and the rest of the cinnamon.
  • Place the cane sugar, oil, water, and salt in a pan.
  • Bring to the boil.
  • Turn down the heat once the mixture begins to boil.
  • Slowly add the flour while stirring.
  • Cook until the flour is done.
  • Allow the dough to cool down and then add the eggs, one at a time.
  • Spoon the dough into a piping bag with a star-shaped nozzle.
  • Heat the deep fryer to 180°C.
  • Pipe ribbons of dough into the oil.
  • Fry the ribbons until they are a lovely golden brown.
  • Set aside to drain and then dip the ribbons in the sugar cinnamon mix. 

Serving suggestions

  • As a friandise served with tea or coffee.
  • As a component in a dessert with components of cinnamon, chocolate and/or vanilla. 
  • Get creative and substitute the cinnamon for star anise, tonka bean or vanilla.
