Ingredients

ml

water

 As needed

 

cinnamon stick

Preparation method

  • Combine the water and the sugar and bring to the boil.
  • Add the cinnamon sticks, place in a vacuum bag, and pull vacuum. 
  • Leave to infuse in a pan or warm water bath at approximately 50°C.

Serving suggestions

  • As the basis for cinnamon sorbet.
  • For poaching pears and apples.
  • As a flavour element in cocktails.
