A delicious syrup to use in desserts, when poaching fruit, and as a flavour element.

Ingredients
- 500 g sugar
- 500 ml water
- 3 cinnamon sticks
Preparation method
- Combine the water and the sugar and bring to the boil.
- Add the cinnamon sticks, place in a vacuum bag, and pull vacuum.
- Leave to infuse in a pan or warm water bath at approximately 50°C.
Serving suggestions
- As the basis for cinnamon sorbet.
- For poaching pears and apples.
- As a flavour element in cocktails.
