morel mushrooms

shallot

ml

extra virgin olive oil

bay leaf

sprig

thyme

vegetable stock

As needed:

Preparation method

  • Use a clean and dry mushroom brush to clean the morel mushrooms, making sure that all the sand is washed from the ridges.
  • Finely chop the shallot and gently fry in the olive oil until soft, taking care not to let the shallot brown.
  • Add the morel mushrooms, bay leaf, and thyme and fry quickly on medium heat until cooked.
  • Deglaze the pan with the vegetable stock and season to taste with salt.
  • Cut a few of the mushrooms into slices and leave some intact.

Serving suggestions

  • A beautiful flavour combination paired with components of sea bass, morel mushrooms, and watercress.
  • Delicious in combination with onion, pork, and Jerusalem artichoke.
  • Combines well with duck, bacon, and potato.
