Preparation method

  • Cut the peeled apricots lengthways through to the stone and twist the two halves in opposite directions.
  • Remove the stones.
  • Make a stock by boiling together the water, sugar, honey, lemon, and lime peel.
  • Leave to infuse next to the heat for half an hour.
  • Add the apricots.
  • Poach the apricots for several minutes and leave to cool in the liquid.

Serving suggestions

  • As a component in a dessert with almond and chocolate and other apricot components.
  • In combination with flavours such as vanilla, cardamom, cinnamon, cumin, orange, lemon, lime, or ginger.
