Preparation method
- Blend all ingredients except the cocktail onions.
- When the crème begins to thicken, add the silver onion and blend until fine.
- Season to taste with salt, pepper and white wine vinegar.
Serving suggestions
- As part of a cold dish, e.g. with components of chicory, mussels, bacon or aubergine.
- As a component in an amuse-bouche, e.g. with bavarois and tomato chutney.
- Perfect in dish with pork, mustard, and tomato.
