Ingredients

white wine vinegar

 

 

salt and pepper

Preparation method

  • Blend all ingredients except the cocktail onions.
  • When the crème begins to thicken, add the silver onion and blend until fine.
  • Season to taste with salt, pepper and white wine vinegar.

Serving suggestions

  • As part of a cold dish, e.g. with components of chicory, mussels, bacon or aubergine.
  • As a component in an amuse-bouche, e.g. with bavarois and tomato chutney.
