Preparation method

  • Cut the fish in half lengthwise at the point where the three parts of the fish come together to remove the fillets. 
  • Brine the fish at room temperature for two hours.
  • Remove the excess salt and leave the fish to rest in the refrigerator for six hours. 
  • Cook the cod in olive oil at 55°C until the segments start to separate. 

Serving suggestions

  • As a component in a composition with potato, hazelnut, and winter truffle.
  • As a component in a composition with pumpkin, bahārāt, and carrot.
