Cold avocado soup with tequila

Ingredients

avocados

dl

chicken stock

dl

single cream

4

tbsp

coriander, finely chopped

1

tbsp

lime juice

As needed:

 

tequila

Preparation method

  • Cut the avocados lengthwise around the pit and discard the pits.
  • Spoon the flesh from the avocados
  • and blend with the bouillon, lime juice, single cream and coriander.
  • Pour through a fine sieve and season with salt.
  • Refrigerate until serving.

Serving suggestions

  • To serve, fill a shaker with ice at the table and add the soup and the shot of tequila. Shake and serve!
  • As a cold soup garnished with garlic croutons, tomato and coriander.
  • As a cold soup with sautéed tiger prawns and blocks of cucumber.
