Cold-smoked Brussels sprouts

This is a lovely combination of Brussel sprouts and smoky flavours.

Ingredients

  • 500 Brussels sprouts
  • 100 butter

Preparation method

  • Clean the Brussels sprouts and blanch in water seasoned with salt.
  • Drain the Brussels sprouts thoroughly in a sieve. Place the Brussels sprouts between cloths to thoroughly dry the surfaces.
  • Then place the Brussels sprouts on a rack and cold smoke with the woodchips. 

Serving suggestions

  • As a component in game dishes.
  • As a component in a composition with poultry.
  • Use the loose leaves of the Brussels sprouts as a garnish.
