Preparation method

  • Trim the tuna, portion, and season with salt and pepper.
  • Vacuum seal with a generous amount of olive oil.
  • Confit in a hot water bath at 60°C for approximately 30 minutes. 

Serving suggestions

  • As a component in a salad,
  • As a component in a starter, e.g. with grilled butterhead lettuce.
  • As a component in a dessert, e.g. with cucumber components.
  • As a component in an entremets course, e.g. with fennel and tomato components.
