Ingredients

large potatoes

As needed:

 

Wagyu fat

bulb

garlic

thyme

rosemary

pepper, coarsely ground

Preparation method

  • Cut the potatoes in slices approx. 1cm thick.
  • Cut them to the preferred shape or size.
  • Confit the slices in Wagyu fat mixed with garlic, thyme, rosemary, salt and coarsely ground pepper.
  • Check if the potatoes are cooked by putting a knif through one of them. They are cooked when you don't feel much resistence.

Serving suggestions

  • Delicious with a hamburger made with Wagyu beef, leek, spring onion and tarragon cream.
  • The potato slices can also be confitted with olive oil instead of Wagyu fat. The result will be fruitier than if you use fat derived from beef.
  • Serve with a topping of stew, mackerel cream or smoked salmon.
