Coriander egg white crème

In the modern kitchen, egg white crèmes are a subtle version of mayonnaise. The addition of the coriander makes this version exceptionally fragrant.

As needed:


salt and pepper

Preparation method

  • Use a hand-held blender to mix all the ingredients, except for the oil, together in a measuring jug. 
  • Add the oil drop by drop until you have a smooth crème. 
  • Season to taste with salt and pepper. 
  • Store in the refrigerator.

Serving suggestions

  • As a component in a composition with fennel, yuzu, and avocado. 
  • As a component in a composition with mango, ginger, and coconut. 
  • Use in composition with components of chicken, lime leaves and pistachio.
