chicken stock

agar agar

Preparation method

  • Finely chop all ingredients except the agar agar and rub through a sieve.
  • Bring the mixture to the boil, add the agar agar and transfer to a large container.
  • Set to cool and blend into a gel. 

Serving suggestions

  • As part of a starter with smoked poultry, tomato or fennel.
  • As part of a starter with crab or lobster.
