Ingredients

Preparation method

  • Halve the courgettes and remove the seeds.
  • Chop the courgettes into pieces.
  • Bring water and a little salt to the boil and cook the chopped courgette until done.
  • Drain the pieces in a sieve and, if necessary, dry on a cloth.
  • Purée the courgettes with the garlic, mint, eggs, olive oil, and flour until you have a creamy mixture.
  • Pour into moulds and cover with a silicone baking sheet.
  • Steam the courgette flan for approximately 50 minutes until done.

Serving suggestions

  • As a vegetable dish in combination with an aubergine and Parmesan cheese component.
  • As part of a starter with tomato and Pecorino components.
