Preparation method

  • Use a mandolin to shave the courgette lengthwise into slices 4mm thick. Make sure you do not shave the seeds with it.
  • Cut the slices into long spaghetti ribbons.
  • Briefly blanch the spaghetti in water to which salt has been added.

Serving suggestions

  • As a basis for a starter, e.g. serve with cockles prepared alle vongole.
  • As a garnish in an entremets, e.g. with grilled scallops and a Hollandaise sauce mounted with olive oil.
