smoked paprika

lemon zest

shallot

Preparation method

  • Finely chop the shallot and sweat together with the smoked paprika.
  • Cut the chorizo into cubes, add to the shallot, and braise briefly.
  • Add the courgette and braise all the ingredients until done.
  • Season to taste with salt, pepper, and lemon zest.
  • Finely chop the mint and add to the mixture.

Serving suggestions

  • As a garnish for starters or amuse-bouches.
  • Variation tip: leave out the chorizo for a vegetarian version.
