Ingredients

couscous

4

dl

red cabbage juice

2

tbsp

olive oil

1

tbsp

lemon juice

 

 

salted Moroccan lemon

 

 

smoked sesame seeds

 

 

Maldon salt

Preparation method

  • Bring the red cabbage juice to the boil.
  • Weigh out the couscous in a large bowl and pour the boiling red cabbage juice and olive oil over it.
  • Briefly stir with a fork to remove any lumps.
  • Stir again after 2 minutes, after 5 minutes and after another 5 minutes.
  • Season to taste with lemon juice, the zest of the salted lemon and the smoked sesame seeds.
  • Punch into shapes with a cutter on the plate (optional) and garnish with the lemon, sesame seeds and Maldon salt.

Serving suggestions

  • As part of a main course, e.g. with grilled halibut.
  • As part of a main course, e.g. with lemon chicken.
