This crab component is very easy to make. You can use all sorts of oil; here we use an oil inspired by India.

Preparation method

  • Make the vadouvan oil by first frying the curry powder in a little oil to release the flavours and then adding the rest of the oil.
  • Add the other ingredients and allow to infuse at 60°C for at least 3 hours.
  • Pass the oil through thick paper.
  • Boil the crabs in salted water for approx. 2 minutes.
  • Plunge the crabs in iced water to stop the cooking process.
  • Twist off the claws from the crab and clean.
  • Now sauté the claws in the curry oil and season to taste with garam masala.

Serving suggestions

  • As a component in a salad.
  • Delicious with, for example, (lemon) mayonnaise.
  • Use the crab meat to make sushi.
