Preparation method

  • Measure the liquid and add 1% agar agar. For this recipe this amounts to 10g.
  • Bring to the boil and cook for three minutes.
  • Allow to set and blend into a smooth gel in a thermo blender at 50°C.
  • Store in a container or immediately spoon it into a piping bag or bottle.

Serving suggestions

  • As part of a dessert with orange and vanilla components.
  • As a component of a dessert such as orange panna cotta.
  • As a gel to go with a dessert such as a semolina pudding with pistachio ice cream.
