Crayfish oil and buttermilk vinaigrette
A perfect way to make a rich vinaigrette to go with seafood.

Preparation method
- Mix the cream and buttermilk well together.
- Season to taste and add the crayfish oil.
- Stir just before serving. This vinaigrette is best served table side.
Serving suggestions
- Use in a composition with lobster, rhubarb and nasturtium.
- Use as part of a dish with shrimps, lettuce and chives.
- Substitute the oil for any other strong flavored oil, for example try chive or lovage oil.
