Ingredients

red beets, peeled

Preparation method

  • Bring the water and sugar to the boil and continue boiling for one minute. Set to cool.
  • Peel the beets and cut into slices 2mm thick.
  • Cut the slices into 2mm strips (julienne).
  • Place the red beet in the sugar water and let rest.
  • Divide the red beet evenly over silicone mats and use a round dessert ring or punch to make round shapes. Make sure that the beet julienne overlaps well, but do not make the layer too thick.
  • Dry in an 85°C oven for 3-4 hours,
  • turning once.
  • Store in an air-tight container with silicone granules.
