Preparation method

  • Combine all ingredients in a pan and heat to 106°C. Use a thermometer.
  • Roll the ensuing dough out as thin as possible between two sheets of baking paper.
  • Bake the wafer in an oven at 160°C for 10 minutes.
  • Punch out in the desired shape, or shape the wafer, while still warm. The wafer will still be pliable as long as it is warm.
  • Store in an air-tight container, preferably with silicone granules. 

Serving suggestions

  • As a component in an adaptation of a Dame Blanche.
  • As a component in an adaptation of a banana split.
  • As a friandise.
  • In a dessert with yuzu gel, a chocolate fritter and yuzu panna cotta.
