Ingredients

passion fruit coulis

icing sugar

albumin powder

Preparation method

  • Beat together all the ingredients until dry, stiff peaks are formed. It should resemble meringue.
  • Fill a piping bag with this mixture and pipe dots or other shapes on silicone paper.
  • Dry the meringues in a drying machine or in an oven at 65°C.
  • Store in an air-tight container with silicone granules.

Serving suggestions

  • As a component in a dessert with components of coconut, ginger, kiwi, lime, mango, nuts, pineapple, banana, grapes, and dark and white chocolate.
