Preparation method

  • Mix the glucose and fondant in a pan and heat.
  • Add the isomalt and heat to a temperature of 160°C.
  • Cool to 120°C and add the ground peanuts.
  • Pour onto a silicone sheet and slice or cut into pieces of 5x5cm.
  • Heat the pieces between 2 sheets of silicon paper in a 170°C oven for 5 minutes.
  • Roll out with a rolling stick and slice immediately into neat strips 1cm wide.
  • Shape into rings around a metal tube or skewer and store in a well-sealed container with silicone granules.

Serving suggestions

  • As a garnish for a dessert, e.g. with peanut ice cream and fried pineapple.
  • As a friandise, e.g. with a crémeux of caramel.
